Cold Storage for Ginger: Curing, Sprout Control and Why Colder Is Not Better

Bangladesh imports a large share of its ginger, mostly from China and India, even though ginger is grown domestically in hill districts and parts of the north. Part of the reason is storage: fresh ginger rhizomes are notoriously difficult to hold for more than a few weeks without sprouting, shrivelling or rotting, and most small growers sell immediately after harvest at whatever price the market offers rather than holding stock for a better window. Proper cold storage changes that equation, but ginger is not potato or onion, and treating it like either one is a common and costly mistake — ginger has its own temperature sensitivity, its own curing requirement, and its own rot risk that needs a specifically tuned storage approach.

Curing Comes Before Cooling, Not After

Freshly harvested ginger rhizomes carry cuts and bruises from the digging process, and those wounds are open doors for fungal rot organisms like Fusarium and Pythium if the rhizome goes straight into cold storage. A short curing period — holding the ginger at a warmer temperature, generally in the low-to-mid 20s Celsius, with moderate humidity for several days before it goes into cold storage — lets the wound tissue form a protective layer (suberization) over the cut surfaces, similar in principle to how seed potatoes are cured before storage. Growers who skip curing and move ginger directly from field to cold room often see rot start at exactly the points where the rhizome was damaged during harvest, regardless of how well the storage room itself is run afterward.

Ginger Is Chill-Sensitive: Colder Is Not Better

This is the detail that catches people who assume all root and rhizome crops store the same way. Potatoes tolerate storage down near 3–4°C. Ginger does not: temperatures below roughly 12–13°C cause chilling injury, which shows up as internal discolouration, pitting on the skin, and a texture change that makes the rhizome unsuitable for sale even though it has not technically rotted. The workable storage range for ginger is generally cited as 13–15°C, which is noticeably warmer than most cold storage operators default to when they are running a single multi-purpose room. A cold store built primarily for potatoes or vegetables at typical vegetable-storage temperatures will chill-injure ginger stored in the same space unless the room is specifically zoned or the setpoint is adjusted for the ginger batch.

Humidity Has to Stay High Without Creating Standing Moisture

Ginger loses saleable weight and develops a shrivelled, fibrous texture quickly in dry air, so relative humidity needs to stay high, generally in the 65–75% range. But high humidity combined with the chill-sensitive temperature range creates ideal conditions for surface mould if there is any standing moisture or poor air circulation, which is why ventilation design matters as much as the humidity setpoint itself. Rhizomes stored in sealed plastic crates with no airflow will sweat and rot faster than the same rhizomes in ventilated crates at the same humidity, because trapped condensation on the rhizome surface is what actually starts most storage rot, not ambient humidity on its own.

Sprouting: The Slow Loss Nobody Notices Until It Is Too Late

Even under otherwise correct conditions, ginger rhizomes are living tissue and will eventually sprout given enough time and any warmth, sending up new shoots that draw down the rhizome’s own starch and water reserves and leave it lighter, softer and less valuable. Sprouting accelerates sharply outside the recommended temperature band, which is another reason the 13–15°C range matters — it is cold enough to meaningfully slow sprouting without dropping into the chilling injury zone. There is no storage treatment that stops sprouting indefinitely; the realistic goal is extending the sellable window from a few weeks at ambient temperature to several months under correct cold storage, not indefinite preservation.

What This Means for a Bangladeshi Grower or Trader

The practical opportunity here is import substitution at the margin, not full self-sufficiency. A grower or trader who can hold locally grown ginger through several months after harvest, rather than selling immediately into a glutted post-harvest market, can time sales into periods when import supply is thinner or freight costs from China have pushed import prices up. This does not eliminate the need for imported ginger, since Bangladesh’s growing regions and volumes are limited compared with demand, but it does let local growers capture more of the value from their own harvest instead of selling everything at the lowest point in the seasonal price curve.

  • Cure ginger for several days at warmer temperature and moderate humidity before cold storage, not after.
  • Keep storage temperature in the 13–15°C range — colder causes chilling injury, not better preservation.
  • Maintain high humidity (65–75%) but with real ventilation, since trapped moisture causes more rot than dry air.

How This Compares to Onion and Garlic Curing

It is easy to assume all root and bulb crops cure the same way, but the mechanism is different enough to matter. Onion and garlic curing is primarily about drying down the outer skins and neck tissue after harvest, reducing surface moisture so the bulb forms a papery protective layer and stops rotting from the neck inward — that process actively wants lower humidity during the curing window itself. Ginger curing is doing something else: it is encouraging the rhizome to heal physical wounds from digging by forming a corky suberized layer over cut surfaces, a process that needs warmth and moderate-to-high humidity, not drying. A grower who applies onion-style curing logic to ginger — spreading it out in a dry, ventilated space to “toughen the skin” — can actually slow the wound-healing response and leave cut surfaces vulnerable to rot organisms for longer than if the rhizome had gone through a proper warm, humid curing period. The two crops end up needing similar-sounding but mechanically different treatment before either goes into cold storage.

One more practical point worth flagging for anyone converting part of an existing vegetable store into a ginger zone: thermostats and controllers on small multi-purpose cold rooms are often calibrated and labelled for a single default setpoint, and switching between crops run at different temperatures on the same equipment means someone has to reliably remember to change the setpoint back and forth, and log which batch is currently in the room. A mislabelled room defaulting back to a potato-appropriate setpoint after a ginger batch was loaded is a realistic and entirely avoidable way to lose a batch to chilling injury.
