How a soft serve machine works

Liquid mix is poured into a refrigerated hopper on top. It flows into a freezing cylinder, where a rotating beater scrapes the frozen layer off the cold cylinder wall and whips air into it. The share of air whipped in is called overrun. More overrun means a lighter, softer texture and more servings from each litre of mix; too much tastes thin and melts fast. You can use powder premix (mixed with water or milk), ready liquid mix, or your own recipe made from milk, sugar, milk powder and stabilisers.   4. Lubricate O-rings with food-grade lubricant when reassembling; dry seals leak and wear fast.
