Cold Chain for Strawberries: Why the Most Fragile Fruit in Bangladesh’s Supply Chain Has No Room for Error

Strawberries are now grown commercially in parts of northern Bangladesh, particularly around Chapainawabganj and neighboring districts, alongside the volume that still moves through import channels during the local off-season. Whichever direction a shipment travels, strawberries are one of the least forgiving fruits in the entire cold chain, and the reason has less to do with temperature than with the fruit’s own physical structure.

Why Strawberries Fail Faster Than Almost Any Other Fruit

Unlike a mango or a papaya, a strawberry has no protective rind standing between the outside world and the flesh — the entire surface is exposed skin, which means moisture loss, physical bruising and mould infection all happen directly and immediately rather than being slowed by a peel the fruit sheds only at the point of eating. A strawberry also does not ripen further once picked; whatever sugar and color it has at harvest is what it will have at the point of sale, which removes the buffer that lets a slightly early-picked mango or banana still arrive in saleable condition after a rough journey.

Pre-Cooling Immediately After Harvest

Field heat has to come out of strawberries within hours of picking, not the next day, because the fruit’s high surface-area-to-volume ratio means it both absorbs and radiates heat far faster than bulkier produce, accelerating the decay processes that are already running from the moment the fruit leaves the plant. Forced-air pre-cooling, covered in general terms in our guide to pre-cooling methods, is the standard approach for strawberries specifically because it cools the fruit evenly through ventilated crates rather than only from the outside surface inward, which is what happens when warm fruit is simply placed into a cold room without forced airflow.

The Narrow Temperature Band That Actually Works

Strawberries are typically held around 0–2°C for short-term storage and distribution, a band narrow enough that both directions of error cause visible damage: too warm and mould growth (particularly grey mould, Botrytis) accelerates within a day or two; too cold, at or below freezing, and the fruit suffers chilling injury that shows up as a dull, water-soaked appearance and mushy texture the moment it warms back up for display. Humidity and the Mould Problem Nobody Fully Solves

High humidity, typically maintained around 90–95% for most soft fruit, is necessary to prevent the fruit from drying out and shriveling, but that same humidity is exactly what grey mould needs to spread once a single infected berry is packed among healthy ones. There is no cold chain setting that eliminates this trade-off entirely; the practical control is sorting rigorously at packing to remove any berry showing early signs of soft spots or mould before it goes into a punnet with others, since one infected berry in a sealed clamshell can visibly spoil its neighbors within a day even at correct storage temperature.

Packaging Choices That Actually Matter

Ventilated clamshell containers, rather than sealed solid punnets, are the standard for a reason: they allow the fruit to shed the moisture it constantly releases as it respires, preventing condensation from pooling inside the packaging and creating exactly the damp surface conditions mould needs. Stacking depth matters as much as the container itself, because strawberries at the bottom of a deep stack bear the weight of the fruit above them and bruise from pressure alone, which is why commercial packing rarely stacks strawberry crates more than a few units high regardless of how much vertical space a cold room or reefer container offers.

Distribution Speed as a Cold Chain Requirement, Not a Convenience

A strawberry shipment that sits in an un-refrigerated delivery van for even a couple of hours during Dhaka traffic can arrive at a retailer visibly softer and duller than one moved in a properly insulated vehicle over the same distance, in a way that is immediately obvious to the buyer rather than a subtle quality difference.

Cold Storage Duration Limits Even at Correct Temperature

Even held at a correct 0–2°C with proper humidity, strawberries have a practical cold storage life measured in days rather than the weeks or months achievable with hardier produce like potatoes or onions, because the fruit continues to respire and lose firmness even at optimal storage conditions — cold storage slows decay, it does not stop it the way freezing would. This is an important expectation to set correctly for anyone new to handling the category: a mini cold storage unit holding strawberries needs to move through inventory quickly on a genuine first-in-first-out basis, since even a few extra days beyond the fruit’s realistic window shows up as soft, dull stock that retailers will visibly reject or discount.

Domestic Growing Season Versus Import Timing

Bangladesh’s domestic strawberry harvest runs through the cooler winter months, which naturally reduces the cold chain burden somewhat since ambient temperatures during harvest and initial handling are lower than during the hot season. Imported strawberries filling the gap outside this window face a longer, harder cold chain challenge by comparison — air freight from a source market, since sea freight transit times are almost never viable for a fruit with this short a shelf life, followed by the same domestic distribution challenges described above once the shipment clears customs. This is one of the few produce categories in this guide where air freight is close to the only realistic import mode rather than a faster but optional alternative to sea freight.

Temperature Recording as Proof, Not Just Monitoring

Given how quickly and visibly strawberries show the effects of a temperature excursion, a logged temperature record covering the full journey from pre-cooling through distribution is one of the few forms of evidence that can settle a dispute between a grower, a distributor and a retailer over who is responsible when a batch arrives in poor condition. Without that record, disputes over soft-fruit quality tend to default to whoever has the least leverage in the commercial relationship, usually the smallest link in the chain, rather than being resolved by looking at where the actual temperature excursion occurred.
