A bakery is a strange customer for a cold storage company. A common mistake is sizing a bakery cold room the same way you would size a grocery chiller — by available floor space. Bakery cold storage should be sized around production volume and shift pattern instead. A bakery baking three times a day needs enough retarder capacity to hold a full batch of shaped dough between each bake, plus buffer space for the next day’s prep, which is a very different number from a bakery that bakes once in the morning and sells through the day. What actually goes wrong without proper cold storage
